White Chocolate Pumpkin Bars with Candied Ginger

Another taste treat for autumn.  These delicious bars are a lovely combination of flavors - pumpkin, spices, candied ginger, and luscious white chocolate.  A great way to celebrate the season!


White Chocolate Pumpkin Bars with Candied Ginger
Adapted from Picky Palate

Ingredients:
1/4 cup butter, cut into 1" pieces
9 oz white chocolate, chopped or chips, divided (about 1 1/3 cups)
1 cup flour
1/2 tsp baking powder
1/2 tsp salt
3/4 tsp pumpkin pie spice
2 eggs
1/2 cup brown sugar
2 tbsp sour cream OR plain yogurt
1/2 cup canned pumpkin
1/4 cup candied ginger, minced


Directions:
1.  Preheat the oven to 350°.  Line a 8" X 8" baking dish with parchment paper.

2.  Combine the butter and 5 oz (about 3/4 cups) of the white chocolate in a small bowl.  Microwave for 30 seconds, stop, and stir.  Microwave for 15 seconds, stop, stir, repeat until the chocolate is melted.  Set aside.

3.  In a medium bowl whisk together the flour, baking powder, salt, and spice.  Set aside.

4.  in a medium bowl, whisk the eggs.  Add the brown sugar, sour cream, and pumpkin.  Whisk until smooth.

5.  Add the flour mixture to the wet ingredients.  Stir until almost blended.  Add the remaining 4 oz (aprx a heaping 1/2 cup).  Stir until the dry ingredients are just incorporated.

6.  Pour the batter into the baking dish.  Spread evenly.  Sprinkle the candied ginger over the top.

7.  Bake for about 25-35 minutes, or until a toothpick inserted into the center comes out clean.  Transfer the baking dish to a rack to cool completely.

8.  Cut into bars.  Serve!
