Teddy S'mores

A friend recently shared a recipe with me that included Teddy Grahams.  I immediately thought of using the little cuties to make s'mores.
I thought it would be a simple task, but no.  It took me a few tries to get it right.  There were problems with overmelted chocolate, wrong proportions, cookies tipping over, cookies not sticking, etc.  In the end, there were a couple of methods that would work for these teensy treats.
The first method is obvious - make them as you would the original.  Skewer the mallow, toast it, place it between teddies with a segment of snack size chocolate.  Yum!  I don't know about you, but I don't always have a fire handy.  The second method uses a broiler and chocolate chips instead.  That is what is described in the recipe below.
These itty bitty s'mores are great for snacking of course, but you could also use them for kids parties, cupcake decorations, cookie or treat toppers, and more!  Have fun with  them!

Teddy S'mores

Ingredients:
Teddy Grahams
Mini marshmallows
Chocolate Chips

Directions:
1.  Preheat your broiler to high.

2.  You will need two cookies per s'more.  Lay half of the cookies on a baking sheet or dish with the flat sides facing up.

3.  You will need one marshmallow per s'more.  Cut each marshmallow in half.  Place two halves, sticky sides down, on each cookie in the baking sheet/dish.

4.  Microwave a small amount of chocolate chips until just melted (it takes about 2 chips per s'more).  Pour the chocolate into a Ziplock bag.  Snip one tiny corner of the bag.  Pipe chocolate onto the flat sides of the remaining cookies.

5.  Place the baking sheet/dish with the mallowed cookies under the broiler.  Heat until the marshmallows are golden and toasty.

6.  Remove the baking sheet/dish from the oven.  Immediately place the piped cookies, chocolate sides down, onto the mallowed cookies.  Transfer to a cool plate.  Serve!
